Ingredient List

  • 6 slices of bread (whole wheat or multigrain)

  • 16 oz egg whites

  • 4 oz low-fat cheese (cheddar, mozzarella, or your choice), shredded

  • Salt and pepper to taste

  • Optional: chopped vegetables (spinach, bell peppers, onions, etc.)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a baking dish lightly with cooking spray or olive oil.

  2. Prepare the Bread: Cut or tear the bread slices into bite-sized pieces. Arrange them evenly in the greased baking dish, covering the bottom completely.

  3. Mix Egg Whites: In a large mixing bowl, whisk the egg whites until frothy. Season with salt and pepper to taste. If you're adding vegetables, mix them into the egg whites at this stage.

  4. Pour Egg Mixture: Carefully pour the egg white mixture over the bread in the baking dish or loaf pan, ensuring that the bread is evenly coated.

  5. Add Cheese: Sprinkle the shredded low-fat cheese evenly over the top of the egg mixture.

  6. Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the eggs are set and the cheese is melted and lightly golden on top.

  7. Serve: Once baked, remove the casserole from the oven and let it cool slightly. Cut into squares or wedges, and serve warm.
