Spinach & Cottage Cheese Omelet

Ingredient List
4 large eggs
1 1/2 cups fresh spinach, chopped
1/2 cup cottage cheese
dash Onion powder
Salt and pepper to taste
1 teaspoon olive oil
Instructions:
In a blender, beat the eggs, cottage cheese, onion powder, and season with salt and pepper.
Heat olive oil in a non-stick skillet over medium heat.
Add chopped spinach and sauté until wilted.
Pour the beaten eggs over the spinach.
Spoon cottage cheese evenly over the eggs.
Cook until the edges are set, then gently fold the omelet in half.
