Ingredient List

  1. 4 large eggs

  2. 1 1/2 cups fresh spinach, chopped

  3. 1/2 cup cottage cheese

  4. dash Onion powder

  5. Salt and pepper to taste

  6. 1 teaspoon olive oil

Instructions:

  • In a blender, beat the eggs, cottage cheese, onion powder, and season with salt and pepper.

  • Heat olive oil in a non-stick skillet over medium heat.

  • Add chopped spinach and sauté until wilted.

  • Pour the beaten eggs over the spinach.

  • Spoon cottage cheese evenly over the eggs.

  • Cook until the edges are set, then gently fold the omelet in half.
