Ingredient List
Ingredients
3 large eggs, separated
3 tablespoons cream cheese, softened
1/4 teaspoon cream of tartar
Optional: sweetener (such as stevia or honey) for sweet cloud bread, or herbs/spices for savory cloud bread
Instructions
Preheat the oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
Separate Eggs: Carefully separate the egg yolks from the whites. Place the egg whites in a clean, dry mixing bowl, and the yolks in another mixing bowl.
Prepare the Egg Whites: Add the cream of tartar to the egg whites. Using a hand mixer or stand mixer, beat the egg whites on high speed until stiff peaks form. This may take a few minutes.
Mix Egg Yolks and Cream Cheese: In the bowl with the egg yolks, add the softened cream cheese and any optional sweetener or flavorings. Mix until smooth and well combined.
Combine Mixtures: Gently fold the egg yolk mixture into the beaten egg whites until just combined. Be careful not to overmix, as you want to keep the mixture light and airy.
Form Cloud Bread: Spoon the mixture onto the prepared baking sheet, forming small rounds about 3–4 inches in diameter. You should get around 6–8 cloud bread rounds, depending on size.
Bake: Place the baking sheet in the preheated oven and bake for 25–30 minutes, or until the cloud bread is lightly golden on top and set.
Cool: Once baked, remove the cloud bread from the oven and let it cool on the baking sheet for a few minutes. Then transfer to a wire rack to cool completely.
Serve: Enjoy your cloud bread as a low-carb bread alternative! It's great for making sandwiches, serving with dips, or simply enjoying it on its own.
