Fajita Arancini (makes 3)

Ingredient List
12 oz Chicken Tenderloin or Shredded Chicken
16 oz Chicken Stock
1 Onion diced fine
2 Large Bell Pepper diced fine
2 Tablespoons Mince Garlic
2 Tablespoon Adobo seasoning
3 Tablespoon Cumin
1 Tablespoon Paprika
1 Tablespoon Chili Powder
2 tsp Oregano
2 tsp Salt
2 tsp Black pepper
1 can of dice tomatoes or can of tomato paste
1 tsp Cayenne Pepper (optional)
2 cups of white rice
Egg Whites and Bread crumbs for dredging stations
Instructions
Add ingredients 1-14 to a crock pot on high for 2-4 hours
Add the rice and cook until the base it thick, not very watery. If there is a lot of water, add more rice.
Use a medium disher or a large spoon to form balls
Place the balls on a tray and freeze them until solid
Dip the frozen ball in egg white and dip in the breadcrumbs
Bake for 8-15 minutes at 375 F or deep fry in 350 F oil
Serve with a spicy mayo or along side a margarita.
