Fajita Arancini (makes 3)

Ingredient List

  • 12 oz Chicken Tenderloin or Shredded Chicken

  • 16 oz Chicken Stock

  • 1 Onion diced fine

  • 2 Large Bell Pepper diced fine

  • 2 Tablespoons Mince Garlic

  • 2 Tablespoon Adobo seasoning

  • 3 Tablespoon Cumin

  • 1 Tablespoon Paprika

  • 1 Tablespoon Chili Powder

  • 2 tsp Oregano

  • 2 tsp Salt

  • 2 tsp Black pepper

  • 1 can of dice tomatoes or can of tomato paste

  • 1 tsp Cayenne Pepper (optional)

  • 2 cups of white rice

  • Egg Whites and Bread crumbs for dredging stations

Instructions

  1. Add ingredients 1-14 to a crock pot on high for 2-4 hours

  2. Add the rice and cook until the base it thick, not very watery. If there is a lot of water, add more rice.

  3. Use a medium disher or a large spoon to form balls

    1. Place the balls on a tray and freeze them until solid

  4. Dip the frozen ball in egg white and dip in the breadcrumbs

  5. Bake for 8-15 minutes at 375 F or deep fry in 350 F oil

  6. Serve with a spicy mayo or along side a margarita.
