For the French onion gravy:
2 large onions, thinly sliced
2 tablespoons "I Can't Believe It's Not Butter" or a similar butter substitute
2 cloves garlic, minced
2 tablespoons all-purpose flour
2 cups beef broth
1/2 cup red wine
1 teaspoon fresh thyme leaves
Salt and pepper to taste
For the poutine:
4 cups of your favorite French fries (homemade or frozen)
2 cups cheese curds (traditionally white cheddar cheese curds are used)
Instructions
French Onion Gravy:
Heat a large skillet over medium heat and add "I Can't Believe It's Not Butter" or your chosen butter substitute.
Add the thinly sliced onions to the skillet and cook them slowly over medium-low heat until they become soft, caramelized, and brown. This can take about 20–30 minutes. Stir occasionally to prevent burning.
Add minced garlic and cook for an additional 1-2 minutes.
Sprinkle the flour over the caramelized onions and stir for a few minutes to cook off the raw flour taste.
Pour in the red wine to deglaze the pan, scraping up any browned bits from the bottom.
Add the beef broth and fresh thyme leaves. Bring the mixture to a simmer and let it cook for about 10–15 minutes, allowing the flavors to meld and the gravy to thicken. Season with salt and pepper to taste.
Poutine:
Prepare your French fries according to your preferences. They can be oven-baked, deep-fried, or even air-fried.
While the fries are hot, sprinkle the cheese curds evenly over the hot French fries. The heat from the fries will start to melt the cheese curds.
Ladle the hot French onion gravy over the cheese-covered fries.
Serve your French onion poutine immediately while everything is hot and gooey.
