Ingredient List

1 scoop (about 30g) vanilla protein powder
1 teaspoon baking powder

2 ripe bananas, mashed
1/2 cup unsweetened applesauce
2 large eggs
1 teaspoon vanilla extract

Instructions
Prepare Pancake Batter:
In a blender or food processor, grind the rolled oats into a flour-like consistency.
In a mixing bowl, combine oat flour, protein powder, baking powder, and a pinch of salt.
Mix Wet Ingredients:
In a separate bowl, mash the ripe bananas.
Add applesauce, eggs, and vanilla extract. Mix well.
Combine Wet and Dry Ingredients:
Pour the wet ingredients into the bowl of dry ingredients.
Stir until just combined. If the batter is too thick, you can add a splash of milk or almond milk.
Cook Pancakes:
Heat a non-stick skillet or griddle over medium heat.
Pour 1/4 cup portions of batter onto the skillet.
Cook until bubbles form on the surface, then flip and cook until both sides are golden brown.
Serve:
Stack the pancakes on a plate and top with your favorite toppings.
