Ingredients:
For Garlic Chicken:
750g boneless, skinless chicken breasts, cut into bite-sized pieces
5 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon dried oregano
1 teaspoon paprika
For Rice:
2 cups uncooked brown rice
4 cups water or chicken broth
Salt to taste
For Veggies:
5 cups mixed vegetables (e.g., broccoli, bell peppers, carrots), chopped
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Prepare Rice:
In a rice cooker or on the stovetop, cook the brown rice with water or chicken broth and salt according to package instructions.
Cook Garlic Chicken:
Heat olive oil in a large skillet over medium-high heat.
Add minced garlic and sauté for about 30 seconds until fragrant.
Add chicken pieces, salt, pepper, dried oregano, and paprika.
Cook until the chicken is fully cooked and has a golden brown exterior. Set aside.
Cook Veggies:
In the same skillet, add another tablespoon of olive oil.
