Ingredients:

  • For Garlic Chicken:

    • 750g boneless, skinless chicken breasts, cut into bite-sized pieces

    • 5 cloves garlic, minced

    • 2 tablespoons olive oil

    • Salt and pepper to taste

    • 1 teaspoon dried oregano

    • 1 teaspoon paprika

  • For Rice:

    • 2 cups uncooked brown rice

    • 4 cups water or chicken broth

    • Salt to taste

  • For Veggies:

    • 5 cups mixed vegetables (e.g., broccoli, bell peppers, carrots), chopped

    • 1 tablespoon olive oil

    • Salt and pepper to taste

Instructions

  1. Prepare Rice:

    • In a rice cooker or on the stovetop, cook the brown rice with water or chicken broth and salt according to package instructions.

  2. Cook Garlic Chicken:

    • Heat olive oil in a large skillet over medium-high heat.

    • Add minced garlic and sauté for about 30 seconds until fragrant.
