Ingredient List

  • 1 lb ground turkey

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 1/2 teaspoon red pepper flakes

  • 2 scoops unflavored protein powder (to velvet the turkey)

  • 1 cup grated Parmesan cheese

  • 1 cup cottage cheese

  • 1 jar (24 oz) marinara sauce

  • 6 cups water

  • 2 cups uncooked la

  • Salt and pepper to taste

  • Fresh basil leaves, chopped (for garnish)

  • Additional grated Parmesan cheese (for serving)

Instructions

  1. In a large pot or Dutch oven, brown the ground turkey over medium heat until cooked through, breaking it apart with a spoon as it cooks.

  2. Add the chopped onion and minced garlic to the pot with the turkey and cook until the onion is translucent and fragrant.

  3. Sprinkle the red pepper flakes over the turkey mixture and stir to combine.

  4. Add the unflavored protein powder to the cooked turkey, stirring continuously to coat the meat evenly. Cook for another 2-3 minutes to allow the protein powder to velvet the turkey.

  5. Pour in the marinara sauce and water, stirring to combine. Bring the mixture to a simmer.

  6. Add the uncooked pasta to the pot and simmer for about 10-12 minutes, or until the pasta is tender.

  7. Stir in the grated Parmesan cheese and cottage cheese until well combined. Season with salt and pepper to taste.

  8. Remove the pot from the heat and ladle the soup into bowls. Garnish with chopped fresh basil leaves and additional grated Parmesan cheese if desired.
