1/2 cup low fat plain Greek yogurt
1/2 cup light mayo
1/4 cup favorite hot sauce (such as Louisiana hot sauce)
1 tsp garlic powder (or minced garlic)
1/2 tsp onion powder
1/2 tsp cayenne pepper
1/2 tsp paprika
1/2 tsp salt
Black pepper to taste
5oz canned chicken, drained and shredded
2 celery stalks, minced
1/4-1/2 cup of unflavored Casein or AP Flour
1/4 cup shredded cheddar cheese for topping
Instructions
Mix all ingredients, (except the flour and cheese) in a bowl. Assess the water content. It should be a little thicker than waffle batter. Use the Flour/Protein powder to establish consistency.
In a large non-stick skillet, use cooking spray to cover the bottom of the pan over medium-high heat.
Place a spoonful of the buffalo chicken mixture into the skillet, being careful not to overcrowd the pan.
Flatten them out and fry the fritters for 2-3 minutes on each side or until they are golden brown and crispy.
Once browned and flipped, top with cheese (or don’t)
Use a slotted spoon to transfer the fritters onto a plate lined with paper towels to drain any excess oil.
Repeat with the remaining buffalo chicken mixture until all the fritters are fried.
Serve hot with your favorite dipping sauce and enjoy!
