4 ears of corn, husked and cleaned, cut into 1/3rds (looking like ribs)
2 tbsp I Can't Believe It's Not Butter (The Light One), melted
2 tbsp. low-fat mayonnaise
2 tbsp. plain Greek yogurt
1/2 cup crumbled cotija cheese or parmesan
1 tsp chili powder
1/2 tsp smoked paprika
1/4 tsp. cayenne pepper (adjust to taste)
1/4 cup chopped fresh cilantro
1 lime, cut into wedges
Salt and black pepper, to taste
Instructions
Preheat your grill to medium-high heat.
In a small bowl, mix the melted I Can't Believe It's Not Butter (The Light One) with the low-fat mayonnaise and plain Greek yogurt. Set aside.
Grill the ears of corn, turning occasionally, until they are slightly charred and cooked through, about 10–12 minutes.
Brush the corn with the prepared butter, mayo, and yogurt mixture while it is still hot.
In another small bowl, mix the crumbled cotija cheese, chili powder, smoked paprika, cayenne pepper, salt, and black pepper.
Roll the buttered corn in the cheese and spice mixture until well coated.
Place the corn ribs on a serving platter.
Sprinkle chopped cilantro over the corn ribs.
Serve the corn ribs with lime wedges on the side for squeezing over the top.
