Ingredient List
24g vanilla micellar casein protein powder
40g oat flour (can weight out dry oatmeal and run it through a blender)
32g cornstarch
2g baking powder
0.5g salt
80g milk
30g egg whites
4g baking soda (only needed for the boiling water)
Flaky salt
Instructions
Mix together the casein, oat flour, cornstarch, baking powder, and salt in a bowl until well incorporated.
Add in the egg whites and milk. Mix to form a dough
Place the dough in the fridge/freezer for 10 minutes until it has solidified to a place where it is workable.
Roll the dough into a 1/2” thick log. Cut into bites.
Add 4g of baking soda to lightly bubbling water and cook the pretzel bites for 30 seconds then remove.
Top with flaky salt.
Air fry at 400F (204C) for 5-7 minutes or until browned.
