Protein Blueberry Muffins (makes 12)

Ingredients
1/2 cup bread flour
1/2 cup unflavored casein protein
1 tablespoon cornstarch
1/2 teaspoon baking soda
Dash of nutmeg
Dash of salt
1 egg
1/3 cup unsweetened applesauce
1/2 tablespoon vanilla extract
1/2 cup almond milk
1 cup frozen blueberries
1/2 cup dark chocolate chunks
Instructions
Preheat the oven to 350°F (180°C). Line a muffin tin with paper liners or grease with cooking spray.
In a medium-sized mixing bowl, whisk together the bread flour, unflavored casein protein, cornstarch, baking soda, nutmeg, and salt.
In another mixing bowl, beat the egg until light and frothy. Add in the unsweetened applesauce, vanilla extract, and almond milk, and mix well.
Slowly pour the dry ingredients into the wet ingredients, and stir until just combined. Do not overmix.
Gently fold in the frozen blueberries and dark chocolate chunks.
Using a spoon or scoop, fill each of 12 muffin cups about 3/4 of the way full with the batter.
Bake for 10-18 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
