Breakfast Gravy Bake (makes 8 servings)
Calories 235/Protein 20g/Carbs 14g/Fat 11g (per serving)
Ingredient List (toppings are not set in stone. Add the omelet things you like, remove/add cheese)
1 can of biscuit dough (Like Pillsbury biscuits, but gun for the lowest calorie you can find)
1 onion chopped
1-2 bell peppers (any color you prefer)
6 eggs or equivalent in egg whites
1 tsp salt
1 tsp black pepper
1 tube of turkey sausage or 1 pack of turkey bacon (or both or use pork)
1/2 cup almond milk
3 oz shredded cheese of choice (mozzarella and cheddar work best)
Gravy
3 tbsp butter
1/2 cup almond milk
3 tbsp AP Flour or Pea protein powder
Salt and black pepper to taste (like too much black pepper for me, please)
Instructions
Preheat oven to 350 degrees F
Spray 9X13in pan with cooking spray (or rub it down with extra butter) SAVE ANY GREASE!
Cook Bacon or Sausage or both to completion and chop/breakdown meat to bite size pieces to dish
Open biscuit dough and cut all rounds into at least quarters and add to dish
Chop onion, peppers to bite size pieces and add to dish
Mix eggs, salt, pepper, almond milk (1/2 cup), and cheese to a mixing bowl (or blender bottle) and pour it over the dough and meat
You are almost ready ( say something nice to yourself)
In a small pot, melt the butter then slowly sprinkle in the powders (AP or Pea Protein or both). It should be the same amount of butter used. If you like gravy of course
You are making a roux. the deeper the color, the more flavor. Think as it just starts to change color and deepen…
Add 1/2 cup of almond milk and stir it up
add salt and black pepper to taste (you can almost not add enough pepper)
Once the gravy is thiccc gravy-like. If you can read this you know what I mean.
Pour the gravy over the casserole (it’s a casserole bro, get over it)
Bake for 20-25 mins (if the dish is clear-ish, the biscuits with start to brown
Cut and serve
(Extra thing) if there are leftovers, cut them into appetizer size pieces and toss it in the fridge overnight
Bake in the air fryer 400 degrees F for 5-8 mins (look for dark brown crispy edges)
