  • 1 can of diced tomatoes

  • 1 medium onion chopped

  • 1 medium green pepper sliced thin

  • 2 clove garlic minced

  • 1 tsp cumin

  • 1 tsp paprika

  • 1 tsp salt

  • 1 hot pepper of choice chopped

  • 4 eggs

Instructions

  1. In a pan, saute the onion, peppers, and garlic to soften

  2. Remove extra water from the canned tomato and add cumin, paprika, and salt and stir (in the can)

  3. Pour the mix into the onion and peppers and let it reduce for 7-10 minute on medium heat

  4. Carve out a few wells (4) and crack an egg into the divot.

  5. Cover the pan with the lid, and cook the eggs to medium (slightly runny egg)

  6. Can serve over rice or just add it to a bowl and enjoy.
