Strawberry Banana Bake (12 servings/ 2 loaves)

Calories 96/Protein 5g/Carbs 20g/Fat 1g (per serving)

Ingredients (makes 2 loaves, so share one)

  • Half loaf of standard bread cubed (pick the lowest calorie option, as low as 35/slice) dried out it possible

  • 8oz egg whites

  • 1/2 cup of cashew milk (can be dairy or almond, whatever really)

  • 1/2 cup sugar or sweetener

  • 1 tbsp. cinnamon

  • 1 pint of strawberries chopped

  • 3 frozen bananas or pureed bananas

  • 1 tsp nutmeg

  • 9) 1 tbsp. vanilla extract

  • 10) Cooking Spray

Instructions

  1. Heat Oven to 400 F (bake time is about 35-50mins)

  2. Spray the inside of a loaf pan (spraying the outside makes it to slippery).

    1. Can use a casserole dish who cares.

  3. Scatter the cubed bread evenly

  4. Sprinkle the chopped strawberries. This is different than scatter somehow, but keep reading, there is more

  5. In a mixing bowl add egg whites, milk, cinnamon, nutmeg, sugar, vanilla extract, banana puree

    1. Beat it up a bit you know the drill

  6. Incorporate the new liquid to then smother the bread and strawberry union

  7. Bake for 35-50 mins. My oven actually sucks and doesn’t hold temp well. We all have our own struggles right?

  8. Remove when it looks and smells ready

  9. Cool for 10-15 mins and can dust with powdered sugar or topped with jam or more strawberries/bananas
