Protein Cereal Bars

Ingredient List

  1. 4 cups high-protein cereal of your choice (e.g., whole grain, bran flakes, or a protein-rich cereal)

  2. 1 cup vanilla protein powder

  3. 1/2 cup almond butter

  4. 1/2 cup honey or maple syrup

  5. 1 teaspoon vanilla extract

  6. 4 cups mini marshmallows

  7. A pinch of salt

  8. Optional (dunk in chocolate)

Instructions

  1. Combine 4 cups high-protein cereal and 1 cup vanilla protein powder in a large mixing bowl.

  2. In a saucepan over low heat, melt 1/2 cup almond butter and 1/2 cup honey or maple syrup. Add 1 teaspoon vanilla extract and a pinch of salt.

  3. Add 4 cups mini marshmallows to the melted almond butter mixture. Stir until marshmallows are completely melted.

  4. Pour the almond butter and marshmallow mixture over the cereal and protein powder. Mix thoroughly.

  5. Line a baking dish with parchment paper. Transfer the mixture into the pan and press it down firmly and evenly.

  6. Let the mixture cool and set. You can refrigerate it for 1-2 hours to speed up the process.

  7. Once set, remove from the pan and place it on a cutting board.

  8. Cut into individual bars.

  9. Store the bars in an airtight container at room temperature or in the refrigerator for freshness.
