Chocolate Chip Oat Banana Cupcakes makes 24

This recipe is inspired from Josh Cortis’s Snack City. I tried it and found his a little dry. I added salt, vanilla extract, and a banana and it’s better for me. But you want original recipe.
Ingredient List makes 48 minis
100g oat flour (blend the dry oatmeal you have)
2 scoop of Cookies & Cream Casein Protein Powder or Vanilla Casein (can be a blend, but not all whey protein)
260 g from 1 whole Egg + egg whites until you reach the total
50g cornstarch
1 medium smashed banana
8g Baking powder
300mL water
4g Vanilla Extract
1 tsp Salt
60g Chocolate Chips split into 40g and 20g
Instructions
Preheat oven to 325F
Mash the bananas and add egg mix, vanilla extract, water
Mix the oat flour, protein powder, baking powder, salt
Add the wet mix to the dry mix
Add 40g chocolate chips
Spray a mini cupcake tray with cooking spray
Fill each to 1/2 to 3/4 full
Sprinkle 20g of chocolate chips
Bake to 10ish minutes
FULLY LET THEM COOL. THEY KINDA SUCK WARM!!
