Protein Brownies (makes 8)

Ingredients:
2/3 cup oat flour (69g)
1 cup smooth low-fat cottage cheese (226g) (blend it)
1/2 cup cocoa powder (43g)
1/2 cup granulated erythritol sweetener (or sweetener of your choice) (100g)
1 tsp baking powder
1/4 cup chocolate chips (56g)
2 large eggs
1/3 cup brewed coffee OR plain water
1 tsp vanilla extract
Instructions:
Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper. Blend the cottage cheese until smooth.
In a large mixing bowl, combine the oat flour, smooth low-fat cottage cheese, cocoa powder, granulated sweetener, baking powder, chocolate chips, eggs, brewed coffee (or water), and vanilla extract. Mix until well combined.
Pour the brownie batter into the prepared baking pan, spreading it evenly.
Place the baking pan in the preheated oven and bake for 25-30 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.
Allow the brownies to cool completely in the pan before slicing into squares. Serve and enjoy!
