Protein Brownies (makes 8)

Protein Brownies Calories 170/Protein 8g/Carbs 25g/Fat 5g (per serving)

Ingredients:

  • 2/3 cup oat flour (69g)

  • 1 cup smooth low-fat cottage cheese (226g) (blend it)

  • 1/2 cup cocoa powder (43g)

  • 1/2 cup granulated erythritol sweetener (or sweetener of your choice) (100g)

  • 1 tsp baking powder

  • 1/4 cup chocolate chips (56g)

  • 2 large eggs

  • 1/3 cup brewed coffee OR plain water

  • 1 tsp vanilla extract

Instructions:

  • Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper. Blend the cottage cheese until smooth.

  • In a large mixing bowl, combine the oat flour, smooth low-fat cottage cheese, cocoa powder, granulated sweetener, baking powder, chocolate chips, eggs, brewed coffee (or water), and vanilla extract. Mix until well combined.

  • Pour the brownie batter into the prepared baking pan, spreading it evenly.

  • Place the baking pan in the preheated oven and bake for 25-30 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.

  • Allow the brownies to cool completely in the pan before slicing into squares. Serve and enjoy!
