Chicken Barley Tacos

Ingredients:
For the Ground Chicken and Barley Filling:
1 pound ground chicken
1 cup cooked barley
1 small onion, finely chopped
1 teaspoon chili powder
1/2 teaspoon dried thyme, oregano, and sage blend
Salt and pepper to taste
Garlic powder to taste
Cooking spray (for sautéing)
For Assembling Tacos:
8 low-carb flour tortillas
Your choice of toppings: shredded lettuce, diced tomatoes, diced avocado, salsa, sour cream, shredded cheese, etc.
Instructions:
Heat a large skillet over medium heat and lightly coat it with cooking spray.
Add the chopped onion to the skillet and sauté until it becomes tender, about 3-4 minutes.
Add the ground chicken to the skillet, breaking it apart with a spoon as it cooks. Cook the chicken until it's no longer pink and is cooked through.
Stir in the cooked barley, chili powder, dried thyme, oregano, sage blend, salt, pepper, and garlic powder. Cook for an additional 2-3 minutes to allow the flavors to meld.
Warm the low-carb flour tortillas according to package instructions.
To assemble the tacos, spoon the ground chicken and barley filling onto each tortilla. Add your choice of toppings, such as shredded lettuce, diced tomatoes, diced avocado, salsa, sour cream, or shredded cheese.
