Sweet Potato Turkey Tacos

Ingredients:

  1. 150g lean ground turkey

  2. 1 medium sweet potato, peeled and diced

  3. 1 tablespoon olive oil

  4. 1 teaspoon chili powder

  5. 1/2 teaspoon cumin

  6. 1/2 teaspoon paprika

  7. Salt and pepper to taste

  8. 4 small whole wheat or corn tortillas

  9. Toppings: Shredded lettuce, diced tomatoes, salsa, Greek yogurt, and cilantro

    Instructions:

    1. Cook the Sweet Potatoes:

      • Heat olive oil in a pan over medium heat.

      • Add diced sweet potatoes and cook until they are tender and slightly crispy on the edges.

    2. Cook the Ground Turkey:

      • In another pan, cook lean ground turkey over medium heat until it's browned and cooked through.

      • Season with chili powder, cumin, paprika, salt, and pepper.

    3. Assemble the Tacos:

      • Warm the tortillas.

      • Spoon the cooked ground turkey onto each tortilla.

      • Top with the cooked sweet potatoes.

    4. Add Toppings:

      • Add your choice of toppings, such as shredded lettuce, diced tomatoes, salsa, Greek yogurt, and cilantro.

    5. Serve:

      • Serve the tacos immediately.
