Sweet Potato Turkey Tacos

Ingredients:
150g lean ground turkey
1 medium sweet potato, peeled and diced
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper to taste
4 small whole wheat or corn tortillas
Toppings: Shredded lettuce, diced tomatoes, salsa, Greek yogurt, and cilantro
Instructions:
Cook the Sweet Potatoes:
Heat olive oil in a pan over medium heat.
Add diced sweet potatoes and cook until they are tender and slightly crispy on the edges.
Cook the Ground Turkey:
In another pan, cook lean ground turkey over medium heat until it's browned and cooked through.
Season with chili powder, cumin, paprika, salt, and pepper.
Assemble the Tacos:
Warm the tortillas.
Spoon the cooked ground turkey onto each tortilla.
Top with the cooked sweet potatoes.
Add Toppings:
Add your choice of toppings, such as shredded lettuce, diced tomatoes, salsa, Greek yogurt, and cilantro.
